Barrel aging has long been the domain of wine and spirits, but now, it’s making waves in the coffee world. Our roasters are leading the charge, showcasing coffee as the next frontier in barrel aging right from the Seattle Roastery. 

To create this exceptional roast, master roasters start with pounds of unroasted green Guatemalan coffee beans, carefully hand-scooping them into fresh Bourbon oak barrels made in small batches. Regular mixing ensures each bean interacts with the barrel, absorbing the rich flavors and aromas of oak.

“This meticulous process requires time, care, and patience to ensure we preserve the coffee's unique qualities while infusing it with the distinctive character of oak aging,” explains Thompson. The result is a cup that melds earthy notes with the warmth of the barrel, delivering a truly unique experience.

Once the aging is complete, the beans are roasted to eliminate any residual alcohol while retaining the whiskey flavor.
